Honey Glazed Rabbit

Recipes don't get much easier than this, yet the end result is greater than the sum of the very humble ingredients that go into it.  It is a dish that can be enjoyed at home or in the camp site. Either way, your dinner companions will leave the table blessed for dining so sumptuously.

 

Preparation Time: 15-20 min.  Cook Time: 45-50 min.

 

Ingredients

 

2 rabbits, cut up.

Juice of 1 lemon

1 cup honey

1 teaspoon prepared mustard

2 teaspoons Lea & Perrins White Wine Worchestershire Sauce

Paprika (to taste)

2 tablespoons melted butter

Parsley for garnish

 

Step 1: Pre-heat broiler to 550 degrees.  In a small saucepan, combine honey, lemon juice, mustard, and white wine Worchestershire sauce.  Stir over medium heat until hot and well mixed.  Remove from heat and set aside.

 

Step 2: Rub paprika all over rabbit pieces.  Place rabbit pieces in broiler pan and brush with melted butter.  Place pan 5 to 7 inches from heat and brown on both sides for 5 to 7 minutes.

 

Step 3: Remove from broiler and place rabbit in a casserole dish.  Pour sauce over rabbit, cover, and bake 35 to 40 minutes at 325 degrees.

Step 4: Remove from oven and serve on platter garnished with parsley.

 

 

Serving Suggestion:

 

Serve along with corn on the cob.  Add a potato salad and buttered French bread for a complete meal.
